They do pop out when I approach the car; however, why do I have to pull the handle once on the driver's side without anything happening, only for the door to open on the second pull? One more thought on the black plastic: it could have looked a bit more premium. But at least it's illuminated.

This is normal behaviour for keyless entry, in the uk anyway.
If the car unlocked just from you approaching or standing close, that would be a security issue.
If you grasp the handle and pause, it will unlock after second or so and you only need to pull it once.

I find that frustrating too but, as mentioned above, grab, pause, it will unlock, pull once.

Pop out does not equal unlock. You have to touch the handle gently after it pops out to let the system know you want to keylessly unlock it. Then (after the lights have flashed) pull out the handle *once* to unlock the door. Easy & intuitive once you've figured it out.

Ah, okay—you should stroke it gently with your hand; I’ll do that from now on. It’s amazing how Honda has implemented all the technical software involved—really brilliant.

Yes, it is the same as with most other modern keyless entry cars nowadays when you want to lock or unlock them: Simply move your hand near (or onto) the built-in sensor. Only difference here: The device with said sensor has to come out of the door panel, first.
Not much use to yank on a handle when the system just hasn't had the time to unlock yet, right?
